A summer Don Catrin cocktail built around fruit, citrus, cold glass, and the savory ritual of worm salt.
Story
A spritz should feel bright, simple, and easy to repeat. Raspberries add tart fruit, lime keeps the drink sharp, and tequila gives it a clean agave base.
The worm salt rim works because raspberries have natural acidity. Salt makes the fruit taste fuller, while the savory finish keeps the bubbles from feeling too sweet.
Think of this as a summer aperitif with a Mexican edge: light, sparkling, and ready before dinner.
Yield: 1 cocktail | Time: 8 minutes
Ingredients
- 1 1/2 oz blanco tequila
- 4 fresh raspberries
- 3/4 oz fresh lime juice
- 1/2 oz agave nectar
- 3 oz sparkling water or dry sparkling wine
- Worm salt, for a light rim
- Ice
Method
- Lightly rim half of a wine glass with lime and worm salt.
- Muddle raspberries, lime, and agave in a shaker.
- Add tequila and ice, then shake briefly.
- Strain into the glass over ice and top with bubbles.
To Serve
Garnish with a lime wheel and two raspberries.
Notes & Variations
- Use dry sparkling wine for a more aperitivo-style drink.
- Use mezcal for a smoky raspberry spritz.
Ritual
Let the first sip catch only part of the rim. A light touch of salt is enough to make the raspberry pop.
