A summer Don Catrin cocktail built around fruit, citrus, cold glass, and the savory ritual of worm salt.
Story
Fresh cherries bring a deep summer sweetness that pairs beautifully with smoke. In this Collins, the fruit is brightened with lime and stretched tall with sparkling water.
The worm salt rim is not just decoration. It adds a savory contrast that keeps the cherry from tasting like candy and gives the mezcal a cleaner, longer finish.
It is a patio cocktail with a little drama: ruby fruit, clear bubbles, and a salted edge.
Yield: 1 cocktail | Time: 10 minutes
Ingredients
- 2 oz mezcal
- 4 fresh cherries, pitted
- 3/4 oz fresh lime juice
- 1/2 oz agave nectar
- 2 oz sparkling water
- Worm salt, for the rim
- Ice
Method
- Rim a Collins glass with lime and worm salt.
- Muddle cherries, lime juice, and agave in a shaker.
- Add mezcal and ice, then shake until chilled.
- Strain into the glass over ice and top with sparkling water.
To Serve
Garnish with a cherry and a lime wheel.
Notes & Variations
- Use blackberries if cherries are not in season.
- Add one dash of aromatic bitters for more depth.
Ritual
Taste the salted rim before the first full sip. The cherry will feel brighter, the lime sharper, and the mezcal more grounded.
