Story
A Collins is a long conversation — tall, bright, and easy to return to. Mezcal adds smoke, and worm salt anchors the citrus with a savory edge.
The rim is the point of contact, the first flavor you meet. It softens the lemon’s sharpness and makes the mezcal feel warmer and rounder.
This is a drink for late afternoons, sun at an angle, and a slow breeze across the table.

Ingredients
- 2 oz mezcal
- 3/4 oz fresh lemon juice
- 1/2 oz agave nectar
- 2 oz sparkling water
- Pinch of ground chile or cayenne (optional)
- Lemon wedge (for rim)
- Worm salt (for rim)
- Ice
Method
- Rim a Collins glass with lemon and worm salt; fill with ice.
- Shake mezcal, lemon juice, and agave with ice; strain into glass.
- Top with sparkling water and a tiny pinch of chile if desired.
To Serve
Garnish with a lemon wheel and a small pinch of worm salt on the rim.
Notes & Variations
- Swap lemon for lime and add a splash of grapefruit for extra brightness.
